The 899 is the perfect bike for the streets and track as it has "useable" power whereas the 1199 is just a bit too much, peaky engine and throttle delivery. It would be good on the track but I can honestly say that I would be a slower rider on the 1199 than on the 899 or the Ape - why, because they are just easier to ride and wring the neck of.
We just got the part numbers for the Ohlins NIX30 and TTX25 fork cartridge kits for the 899 Panigale! Also there's a TTXGP shock spec'd for the 899 also, it's the same as the 1199 TTXGP shock other than the spring rate.
